Chicken Alfredo Soup

Every time I post on Facebook that I am making Chicken Alfredo Soup I get oodles of messages asking for the recipe. I've posted it several times, but it always gets lost. So what better way to kick off my blog than with this favorite recipe of mine. I hope you enjoy it as much as I do!

You will need:
  • Chicken breasts
  • Potatoes
  • Carrots
  • Celery
  • 32 oz Chicken Broth
  • 2 Jars of your favorite Alfredo Sauce
  • Garlic
  • Onion Powder
  • Basil

{I personally use the frozen garlic cubes and basil cubes, but I also add garlic powder to taste. I use onion powder too.}

If you notice, I don't have measurements for any of the ingredients - I just add enough for us.
We like a lot of potatoes, so I typically cube up about 7 medium size potatoes. I use about a cup and a half of carrots and celery.
  • Wash, peel, and cube potatoes
  • Chop carrots
  • Chop celery
  • Add potatoes, celery, carrots, chicken broth, garlic, onion, and basil to your soup pot.
  • Cook until potatoes are almost done.
  • While veggies are cooking, fry up chicken breasts and cut into pieces.
  • When potatoes are just about cooked, add 2 jars of Alfredo Sauce and Chicken to the pot.
  • Cook just long enough to finish cooking potatoes and to warm everything together.
  • Serve with Italian Bread. {I love to dip the bread into my soup!}
All ingredients ready to go!

Those frozen garlic and basil cubes are great!

Potatoes are almost done...

Chicken is on stand-by... ready to be added.

Everything is cooking - almost finished...

Dinner is served!

Thanks for reading! :)

New Year and New Goals

So it's been quite some time that I have logged on here. I have since had baby #2 and have been keeping quite busy!

My goal this year is to actually utilize this blog to share all kinds of stuff - like I said I was going to do. So enough small talk. Let me write a new post and get this blog going!

Shocked, Impressed, and Embarrassed

So I decided that I better start cleaning and getting ready for Christmas decorating since Thanksgiving is only 5 days away and I like to have the house all decorated for Thanksgiving! I had been jotting down some "thrifty" cleaning tips that I have found online and finally decided to open that gallon of vinegar (seems to be in every recipe for homemade cleaning products!) and tackle my blinds. It was simple: I mixed 3 cups of water and 1 cup of vinegar in a small bucket. I had an old dish towel that I chose to use for cleaning - and I cut it in half.

Keep in mind, I do vacuum my blinds or use that little terry cloth blind cleaner gadget to clean the blinds every so often. Well, you would think that I have never cleaned them after seeing what my rag looked like. I am shocked, impressed, and embarrassed!

Oh... And I should add that this method didn't cause any mess! Each blade wiped clean.

The top rag cleaned 13 blinds and 1 set of vertical blinds.
The bottom rag was never used!
Look how well the vinegar & water solution cleaned!

Let's Get Acquainted

Hello there and welcome to my blog! Here you will find a little bit of everything - recipes, crafts (for grown-ups and kiddies), tips for teachers, and tips for parents. Of course, every now and then I may throw in something totally unrelated to these topics - so you never know what you will find here!

So who am I? I'm a daughter, sister, aunt, wife, and new mommy - in that order! I just had my first baby - a precious little boy - on April 9th. I'm a former teacher. I spent 12 years in the classroom and have taught every grade from K-8. I spent six years teaching in the inner city and the other six in a quiet little town in suburbia. I hold a Master's in Education and still find myself in the classroom every now and then as a substitute teacher. Right now, I'm enjoying being a stay-at-home mom.
